May 4th, this is the perfect time to try this great
recipe. The fresh delicious taste of mangoes
coupled with the texture of fresh fish is a taste
explosion in your mouth!

can diced tomatoes, drained
½
cup ripe medium mango, peeled, diced (3/4 cup)
¼
cup sliced green onions (4 medium)

tbsp chopped fresh cilantro
1
tbsp fresh lime juice
1
tsp finely chopped chipotle peppers in adobo sauce
(Buy For Less sells 7 oz. cans of chipotle red peppers in adobo sauce)

teaspoon coarse (kosher or sea) salt

In food processor place drained tomatoes and then cover; process until coarsely
chopped

Place chopped tomatoes in a medium bowl

Stir in remaining ingredients

Serve with fish or meat, or with tortilla chips as desired
