Panini sandwiches are quick and easy meals that taste great! This panini is no stranger to great taste with delicious sweet onions and goat cheese to bring it all together. It's an adventure for your mouth.

| 2 | tbsp olive oil |
| 2 | sweet onions (1 lb each), thinly sliced |
| Salt and Pepper | |
| ½ | tsp chopped fresh thyme leaves |
| 8 | center slices of country-style bread (½ inch thick) |
| 4 | oz soft fresh goat cheese |
| 1. | In a nonstick 12-inch skillet, heat oil on medium for one minute |

Stir in onions, ½ tsp salt and ¼ teaspoon freshly ground pepper |
| 3. |
Cover and cook 15 minutes or until onions are very soft, stirring occasionally |
| 4. |
Uncover and cook 15 to 25 minutes longer or until onions are golden brown, |
| stirring frequently |

| 5. | Stir in thyme; remove pan from heat |
| 6. | Prepare outdoor grill for direct grilling on medium |
| Meanwhile, assemble panini |

| 7. |
Place 4 slices of bread on work surface |
| 8. | Spread ¼ of goat cheese on 2 of the slices and on top add ¼ of the onion mixture |
| 9. |
Top with the other 2 bread slices |
| 10. |
Place those 2 panini sandwiches on a hot grill grate |
| 11. | Place a heavy skillet (preferably cast iron) on top of panini and press down |
| 12. | Cook 7 to 8 minutes or until bread is toasted and browned on both sides |
| 13. |
Turn over once |
| 14. | Repeat with remaining two panini |
| 15. |
Cut in halves or quarter to serve |
