Herbed Roast Pork Loin & Potatoes

INGREDIENTS:
1 boneless pork loin roast, about 3-4 lbs. (on sale this week $1.00 lb)
1 tsp garlic powder
1 tsp onion powder
1½ 
tsp dried thyme
4-6  medium potatoes (on sale this week $1.77 for an 8 lb. bag)
2 tbsp olive oil
1 tsp thyme
1-2
tsp freeze-dried or fresh chives
½  tsp garlic powder
  
salt and pepper to taste

DIRECTIONS:

1. Rub pork loin with 1 tsp garlic powder, 1 tsp onion powder and 1½ tsp thyme
2.  Sprinkle with salt and pepper
3.
Place pork loin in a shallow roasting pan
4. Roast at 325º for 50 to 55 minutes
5. While roast is cooking, peel and quarter potatoes
6. Cook in boiling water for about 10 minutes
7. Drain and let cool then place potatoes in a large bowl
8.   Toss with olive oil, 1 tsp dried thyme, chives, ½ tsp garlic powder and salt and pepper
9. Place potatoes around pork loin
10. Roast an additional 45 to 60 minutes or until pork registers at least 155º on a meat
thermometer
11. Cover roast pork loin with foil and let stand for about 15 minutes before slicing
