| 1 | boneless pork loin roast, about 3-4 lbs. (on sale this week $1.00 lb) |
| 1 | tsp garlic powder |
| 1 | tsp onion powder |
| 1½ |
tsp dried thyme |
| 4-6 | medium potatoes (on sale this week $1.77 for an 8 lb. bag) |
| 2 | tbsp olive oil |
| 1 | tsp thyme |
| 1-2 |
tsp freeze-dried or fresh chives |
| ½ | tsp garlic powder |

salt and pepper to taste |
| 1. | Rub pork loin with 1 tsp garlic powder, 1 tsp onion powder and 1½ tsp thyme |
| 2. | Sprinkle with salt and pepper |

Place pork loin in a shallow roasting pan |
| 4. | Roast at 325º for 50 to 55 minutes |
| 5. | While roast is cooking, peel and quarter potatoes |
| 6. | Cook in boiling water for about 10 minutes |
| 7. | Drain and let cool then place potatoes in a large bowl |
| 8. | Toss with olive oil, 1 tsp dried thyme, chives, ½ tsp garlic powder and salt and pepper |
| 9. | Place potatoes around pork loin |
| 10. | Roast an additional 45 to 60 minutes or until pork registers at least 155º on a meat |
