Mango Chipotle Salsa

This mango salsa recipe is a great way to
spice up a fish dish! If you like it super spicy
feel free to experiment with the amount of
cilantro or chipotle peppers.
   


INGREDIENTS:

1 can diced tomatoes, drained
1/2  cup ripe medium mango, peeled, diced (3/4 cup) on sale this week!
1/4   cup sliced green onions (4 medium)
2 tbsp chopped fresh cilantro
1 tbsp fresh lime juice
1 tsp finely chopped chipotle peppers in adobo sauce
(Buy For Less sells 7 oz. cans of chipotle red peppers in adobo sauce) 
1/4 teaspoon coarse (kosher or sea) salt

DIRECTIONS:

1.   In food processor place drained tomatoes and then cover; process until coarsely
chopped
2. Place chopped tomatoes in a medium bowl
3. Stir in remaining ingredients
4. Serve with fish or meat, or with tortilla chips as desired
Makes 6 servings

Make the salsa up to 24 hours ahead of time, and store tightly covered in the
refrigerator.
