Thai Pork Burritos

Sure, everyone has had a burrito. But no one has had
a burrito like this! With the tangy spiced pork, these
are the most interesting burritos you'll ever have!

Makes 4 servings 


INGREDIENTS:
pound lean ground pork 
tbsp grated ginger 
garlic clove, crushed 
small onion, thinly sliced 
cups coleslaw mix with carrots 
tsp olive oil 
tbsp soy sauce 

tbsp lime juice 

tbsp honey 

tsp ground coriander 
½  tsp crushed red pepper flakes 
10-inch flour tortillas, warmed 
  Fresh cilantro, chopped 

DIRECTIONS:
1.  Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is 
  no longer pink, about 3-4 minutes. 
2.  Add ginger, garlic, onion, and coleslaw mix and stir-fry with pork for 2 minutes, until 
  vegetables are wilted. 
3.  Stir constantly to blend all ingredients well, about 1 minute. 
4.  Spoon equal portions of mixture onto warm tortillas, garnish with cilantro, roll up to  
  encase filling and serve.
